Bacillus salus carnis


B. salus carnis will be engineered strain of b. subtilis which provides a real-time edibility indicator for packaged meat and fish.

It uses a modified carotenoid pathway to indicate (Fig. h1):

  1. Toxic concentrations of ammonium
  2. Toxicity due to pH
