Heat

Bacillus subtilis
The spores of this organism are highly heat resistant, and it has been shown that these spores express high levels of dipicolinic acid and certain small acid-soluble proteins. No one is sure exactly how these two mechanisms help with heat resistance, but apparently they do reduce water content in the core of the cell and saturate the DNA to protect it (respectively).
